lunch on day2

my life has resorted to posting my meal and snack choices, haha. lunch was easy today, big slice of sour dough bread with peanut butter and unsweetened apple sauce and a handful of salted almonds. also had a cup and half of fruit cocktail becki whipped up this morning, which includes the following fruit we had in the fridge:
raspberries, blueberries, strawberries (which we picked fresh from a pick-ur-own farm yesterday) pears, oranges, mango, apple and banana. we also splashed a 1/2c of fresh OJ, mmmmm so good!
she made a big batch so we can dip into the bowl whenever we want some and ur not always cutting up ur fruit, i know thats good for me cause im lazy, lol, and i would tend to not have such an extravagant bowl of fruit which is way more healthy than just grabbing an apple or something.

i forgot to mention when i started yakking on here how important water is for us to replenish our fluids everyday. my problem is, i dont get thirsty, i feel like im part camel because of it. i dont know why that is but i will have to consciously make myself drink water. i have learned the importance of fibre in our diet therefore the necessity of water to help digest that.
i now have a 1L water bottle i carry around, it reminds me to drink, drink, drink. the way you calculate the amount you should be consuming everyday is take ur weight and half that number and thats the approx amount of fluids(water) u should drink daily. i.e. I am 190lbs, half that is 95, so 95 ozs.

Hey good morning, its day 2 of the vegan diet only 19 days to go, lol. dr.neal says once you get through these 3 weeks you wont want to go back to your normal foods, everything will taste better and the foods you will eat will be more flavour-filled because your taste-buds have come back.
breakfast was awesome today and we got the recipe right out of the book (21 Day weight-loss kickstart- by dr. neal barnard) 

This recipe is called the "breakfast scramble, serves 2" (PAGE 245-246 in the book) here are the following ingredients and how we actually cooked it:
Extra-firm tofu, when crumbled, has a scrambled egg texture and a bit of an egg-like flavour, without the heaviness.
   8 ounces extra-firm tofu, crumbled
   1 yukon gold potato, diced or (whatever potato you prefer)
   1/4 tsp salt
   2 tsps ground turmeric (your preferred spices)

Instructions: Crumble the tofu in a mixing bowl with a whisk or by hand. Steam the potato for about 5 min. While steaming, heat a saute pan up to medium heat. Add the tofu and salt, gently and slowly stirring it while it is in the pan, and cook it for about 3-4 min. stir the turmeric and potato (chopped or diced) into the scramble and cook another minute.
(Per serving: 177 calories, 13g of protein, 17g carbs, 2 g sugar, 7g fat, 34% calories from fat, 2g fiber, 315 mg sodium)

Here is how Becki made it, and thx by the way, it was almost done by the time I rolled outta bed, lol. We didnt have turmeric so she substituted in pepper, garlic and onion pwd. You can really put whatever spice you want in it, its personal preference. Another item that should have been added was flax seed or meal, it is so good for the body and I know personally from past use that it brings down your bad cholesterol numbers significantly. So add the flax (great source of fibre) if you can to this recipe and implement into any other recipe for that matter. Also to note is if you like hot sauce it would taste really good on this wrap as well, a couple drops will go along way.

Companion recipes: Tofu scrambles lend themselves to an endless number of recipes as you'll see. If you like. you can make a big batch of the basic tofu scramble early in the week and then use it in several different recipes over the next few days.

Another great tip Dr. Neal has is this breakfast scramble last about a week in the refrigerator. Note that many of the tofu scramble recipes call for half a batch to serve 2 people, so one batch will go a long way!This was very tasty and the best thing was we put it in a wrap and rolled it up and added our own spices to taste and covered it in salsa. For the first time trying this I was happy to hide it in the wrap, for me personally cause i really wasn't crazy about looking at it to be honest, lol. The other surprise besides the flavor and texture (for which it really did look and taste like scrambled eggs) was that this meal was really filling.
Dr. Neal says that you should have your first meal of the day within an hour of waking because it gives you that energy boost you need to start your day, AND your metabolism. 

Also to note is that i weighed myself yesterday morning and im at 190lbs, not that I think this is going to make a difference right now but thought Id mention it. I do not plan to exercise during these next few weeks either, i should but nothing scheduled on a daily basis. Another important mention is that before I came down to North Carolina on April 8 (2011) I had been in to see my doctor and my cholesterol and blood presssure were elevated. I'll be anxious to see if this new way of living will have a substantial impact on this 44yr old body, lol 

Its beautiful here in Greensboro today, so Im off to read more of Dr. Neal and probably some Eckhart Tolle, another amazing author of A New Earth.

Day 1- of the 21 day kickstart diet

i had a great first day!

Breakfast: 3 pieces of whole grain bread toasted with apple sauce spread on top, a banana and a few strawberries. and i was happy to find non-dairy creamer (soy) made by "silk" and flavored french vanilla and had a couple cups of coffee. also happy that doctor neal said dont count calories, haha. 
Lunch: 1/2 cup of raw almonds, blueberries, strawberries and a banana, a peanut butter sandwich on sour dough bread
Supper:  We went to an italian restaurant and i had a small garden salad and ordered a small pizza, crust well done with extra sauce, it had tomatoes, brocolli, red onion, green peppers, and mushrooms, and of course, NO cheese. it wasnt bad, a little soggy but still tasty, lol.

Snack this evening, a few vegan beers, haha, coors light mixed with a cup of V8 juice, YUMMY!
Ive been very pleased with my day of eating and i dont feel like i have deprived myself of anything, its been a beautiful day!


Tomorrow Im going to post a few recipes, i look forward to it!

the nite b4 the rest of my life....

ok, this post is the last b4 i become a full-blown vegan, yes me, jo, a vegan. dr. neal has me convinced i can do this. becki and i went out to the health food market tonight and bought organic vegies, fruit, and of course what every vegan needs in their diet, tofu, oh gawd that stuff looks gross, but im willing to try it. looking for items that are non-dairy is easy at the "earth fare" but it will be interesting when i get home and in the "normal" grocery. i was worried about having to drink my coffee black but theres actually a non-dairy cream made by "silk" it wont be the same but Ill get use to it im sure.
what im really looking forward, besides losing a few pounds, is getting back my energy, and just feeling good from the inside out. im tired of being tired. i really think its been the dairy and animal fats in my system all these years that has been beating my body down.
im ready for DAY 1 of the 21 DAY weight-loss kickstart to begin so wish me luck and let me know if u decide to start and we can be supportive for each other. im planning on posting everyday about how my body changes and what my energy is like, i look forward to the changes cause they can only be for the better, for me and my health and for my future grandchildren who will have me in their life for hopefully a long time.

vegan or vegetarian?

Well, I saw a speaker at barnes and noble this evening, dr. neal barnard, and yes i got sucked in to buying his book so he could sign it, lol. he had alot of great things to say about why the vegan way is the healthiest  food lifestyle to follow. he mentioned on more than one occasion that people with diabetes, high blood pressure and high cholesterol are much better off going vegan and he even made the food choices sound good. oh gawd Ill miss the real 18%coffee cream everyday in my 4-6 large tim hortons but Ill survive if it gets me off my meds. he even says that "some" people are cured of migraines and their arthritis gets more manageable or even goes away completely in some. so i will keep u posted as i start the "21 day weight-loss kickstart" diet. oh and by the way, i dont kno what day 1 is going to look like or even when it will start, lol, he says to take a week to wrap ur brain around the no animal no dairy idea and then start. and of course as he says, dont start any diet unless u consult ur physician first. i probably wont, lol, but ya'll should. ok, thats it for today, my starbucks is now cold and i need to pick up some wine b4 i pick up my friend at the bar, lol....

ok, so i think i could be a blogger, hmmmm

at 44 my life has come to a cross-roads. i feel like i have so much to offer but the question is, what is that? and to whom am i offering it to? as a single mom of 2 teenage daughters, one, 18 and the other 15 going on 30 they keep me on my toes. after my ex left almost 5 yrs ago, and Ill tell ya, that was the best AND the worst year of my life, lol, i think i lost my mind, almost. the bi-polar-2 kicked in and i finally had a reason for all the craziness i had lived since i was 15. i was at my lowest and ready to leave this earth, i thought my only way out was suicide, and man was i wrong. after my diagnoses and then a few years of therapy, and meds, i found a path which i never thought i would take ever again. school. oh God. and all the while i watched my oldest sibling, my brother michael (who was like a father to me, 11years older, and the patriarch of our family) die of cancer, it was a long 2 years he battled and suffered without as much as a "oh poor me, im sick, feel sorry for me" he didnt complain once and was everyone elses rock through it all, he took the hand which was dealt to him with such grace and dignity. he gave me the strength to face my fears because no fear is greater than death and i was going to suck it up and not wallow in my self-pity any more.
a close friend encouraged me to go back and get my high school and move on to post-secondary in the health and human services field, the only place i could imagine working: helping others. i did it, i struggled through those 3 years of school work which i dreaded every moment of, but the courage i found in myself was over-whelming, the life-lessons i stored in the back of my tired mind will forever be there. the young people i met and the whole college experience was something i would do all over again. they say that the friends you make in college are for life, well, i now have 20+ kids as well as my own 2 and their heart-stamps have made an imprint on mine, they are my forever-friends.
im rambling, but thought these few sentences could start some conversation, im hoping anyway:)
